Our panel-room configuration builds the drying line from insulated Rockwool sandwich-panel rooms on a concrete slab inside a light steel (PEB) shed — conventional cold-store construction, food-grade, and free of any container-size constraint.
Process
Prepared mango (washed, peeled, sliced, pre-treated with a citric/ascorbic or sulphite dip) is loaded onto trays, trays onto wagons, and wagons rolled into a room on floor rails. The room is sealed and hot air is recirculated through the tray stacks at 55–75 °C for a 14-hour batch until the fruit reaches 12–14% moisture. Operation is single-side-door, first-in-last-out — the whole room loads and unloads as one batch.

Trays & wagons
Trays and wagons are supplied in SS 304 — aluminium is rejected because mango is acidic (pH 3.4–4.5) and the dip chemistry would breach EU aluminium-release limits.
- Tray — 900 × 500 × 25 mm; SS 304 angle frame with perforated deck.
- Wagon — 1000 × 1050 × 1890 mm; SS 304; 23 levels at 70 mm pitch; 46 trays; flanged rail wheels.
- Shipping — wagons ship knocked-down and are assembled on site.
Airflow — per-chamber recirculation
Each chamber is a closed recirculation loop: a fan at the blind end pushes hot air through a supply plenum, down through the tray stacks, turns it at the door end and returns it over a top plenum — so no return ducting is needed. A small make-up stream of hot air is mixed in, and an equal moist fraction exhausted.

Controls
- Master PLC controls burner, hot-air generator and all six chamber zones, with a hard interlock capping tray-face air at 65 °C.
- Per chamber: two PT100 sensors, an RH probe, recirculation and exhaust fan control, door switch and IP65 lighting.
- Each chamber runs as an independent zone, so batches can be staggered rather than all six moving together.
- MERV 8 pleated filters on the make-up air intake.
